The very excellent Mr. Eric Ripert recently launched a video blog focused on cooking with a toaster oven. Granted, he uses a rather fancy Cuisinart number, but any decent oven will do. Shown here is a mustard crusted salmon fillet, which I can vouch for. Plenty more good recipes on the site.
